Chili and Rice Recipe

This recipe is gluten and dairy free and is ideal for the paleo followers.  Our kids loved it!

Paleo Chili and RiceFor the chili you will need:

1 onion chopped

2 cloves garlic minced

1 capsicum chopped

1kg mince

tin chopped tomatoes

chilies – optional or just add hot sauce once served

2 tsp cumin

1 tsp cayenne pepper

1 tsp black pepper

1 tsp salt

1 cup beef or chicken broth

For the rice you will need:

1 head of cauliflower


In a pan, saute the onions, capsicum and garlic until soft

Add in mince and cook until brown – drain off the excess fat

Add in the remaining ingredients and stir

Simmer on low heat for 20 minutes, stirring as needed

While that is simmering away, prepare the cauliflower rice.

Cut cauliflower in florets, use a food processor and blend until it looks like rice

Transfer to a pot, add a little water, season with salt and pepper to taste, add a little garlic if you want.

Over a medium heat, stirring as needed, cook the cauliflower rice until soft.

Serve the mince on top of the cauliflower rice and enjoy!
