Beautiful Blueberries!

Bluebeblueberriesrries are HUGELY popular in our house right now. They are as sought after as a packet of lollies with everyone complaining if they don’t get their fair share!

Luckily unlike lollies these little blue treats are a nutritional powerhouse containing higher antioxidant levels than just about every other fruit and vegetable.

They are also high in fibre and contain impressive amounts of Vitamin C, Vitamin K and Manganese so can play a vital role in promoting overall good health including positive effects on gut health, anti-ageing, brain health, heart disease and cancer.

Blueberries are a great little snack on their own (perfect for school and kindy lunches!) plus there are lots of other fun ways for the whole family to enjoy these little nuggets of nutrition. They are awesome in smoothies, great for guilt free deserts and baking and they even make a great addition to summer salads.

Here are a couple of healthy recipes to help you enjoy even more of this sweet little fruit while it is still in season:

Eliza Energizer Blueberry Smoothie

It doesn’t get much healthier than this smoothie! With added flaxseed, chia seeds, oats and dates it has a taste that kids will love while they get a huge health boost.Blueberry Smoothie

  • 1 x chopped frozen banana
  • 1/2 cup Fresh NZ Blueberries
  • 1 tsp flaxseed
  • 1 tsp chia seeds
  • 1 tablespoon Oats
  • 2 x fresh pitted Dates
  • 1 tsp of your favourite nut butter
  • 1/2 cup of milk, water or coconut water

Blend all ingredients together in blender until smooth – Enjoy!!

Blueberry and Smoked Chicken Super Salad

  • 1 small cos lettuce, roughly chopped
  • 50 g snow peas roughly chopped 
  • 2 small spring onions, finely chopped
  • 8 – 10 mint leaves, finely
  • 50g feta, cubed
  • 50g, slivered almonds 
  • 1 smoked chicken breast,

Begin by toasting the slivered almonds in a pan for 1 – 2 minutes until golden brown. In a large bowl combine the rest of the ingredients until evenly distributed.

For the dressing 

  • 3 tablespoons of olive oil
  • 1 teaspoon of mustardEliza's Blueberry Smoothie
  • juice of one lemon or lime

Combine in a bowl and season with salt and pepper, use over salad.
